1 aubergine - washed and trimmed
1 red pepper - deseeded and diced
1 red onion - sliced
1 garlic clove - crushed
1 can of Astra Polpa
A handful of fresh basil - chopped finely
Salt & ground black pepper
Fry Light Low Calorie Spray
Preheat the oven to 200C.
Cut the aubergine and peppers into even-sized chunks and place in an ovenproof dish. Add the onion, garlic, spray with Fry Light Low Calorie Spray, season, and toss to mix.
Bake for 20 minutes.
Remove the dish from the oven, stir in the tomatoes and basil.
Make a space in the center of the vegetable mixture and crack the eggs in the center.
Cover the dish with foil. Bake for 15 to 20 minutes or until the egg is cooked to your liking.
