  • 2 sheets of filo pastry
  • 6 small apples, peeled and diced
  • 1 teaspoon cinnamon
  • 1/2 teaspoon ground cloves
  • 1 teaspoon local honey
  • 1 teaspoon vanilla essence
  • 1 tangerine (juice and zest)
  • Low-calorie cooking spray (butter flavor)
  • 1 teaspoon baking powder

Instructions:

  1. Prepare the Apple Filling:
  • In a pan, combine the diced apples, cinnamon, ground cloves, honey, vanilla essence, tangerine juice, and tangerine zest.
  • Cook over medium heat for about 10 minutes, stirring occasionally, until the apples become tender and fragrant.
  1. Add Baking Powder:
  • Once the apple mixture is cooked, remove it from the heat.
  • Stir in baking powder and mix well. Set aside to cool slightly.
  1. Prepare the Pastry:
  • Preheat your oven to 180°C (350°F).
  • Lightly spray a small baking dish with low-calorie cooking spray.
  1. Assemble the Pie:
  • Lay one sheet of filo pastry in the prepared baking dish.
  • Spoon the apple filling into the center of the pastry, leaving some space around the edges.
  • Place the second sheet of filo pastry on top and gently press down to seal the edges.

Ingredients:

  • 2 sheets of filo pastry
  • 2 large aubergines
  • 2 large onions, unpeeled
  • 2 large garlic bulbs, unpeeled
  • 1 tablespoon tahini
  • 1 tub (approximately 200g) natural light yogurt
  • 2 egg whites
  • Juice of 1 whole lime
  • Fresh mint leaves, chopped (to taste)
  • 1 tablespoon mustard
  • 1 teaspoon cumin
  • Low-calorie cooking spray

Instructions:

  1. Bake the Vegetables:
  • Preheat your oven to 200°C (390°F).
  • Prick the aubergines with a toothpick and place them on a baking tray.
  • Add the unpeeled onions and garlic bulbs to the tray.

  • Seasonings: salt, pepper, coriander (to taste)

Caponata Bake

Ingredients:

GF D

  • 400g medium potatoes or sweet potatoes – thinly sliced 100g light cottage cheese
  • 2 onions – 320g, finely chopped
  • 4 tsp balsamic vinegar
  • 2 tsp vegetable bouillon powder
  • 800g canned chopped tomatoes
  • 2 aubergines – cut into chunks
  • 2 red peppers – deseeded and chopped
  • 30g pack basil leaves picked and finely chopped
  • 3 garlic cloves – finely grated
  • 2 tsp capers
  • 30g flat-leaf parsley – chopped

Method:

  1. Boil the potato slices for 10 mins and drain.
  2. Meanwhile, heat a frying pan and cook the onion until softened.
  3. Spoon in the balsamic vinegar and bouillon powder, stir in the tomatoes, aubergine, peppers, basil, and garlic.
  4. Cover and cook for 20 mins, stirring frequently and adding a little water if necessary — until the aubergine is tender when tested with a knife.
  5. Remove from the heat and stir in the capers and parsley.
  6. Tip into a shallow baking dish. Cover the caponata with the boiled potatoes and sprinkle with the cottage cheese and bake for 20 minutes until the top is golden brown and crispy.

Method:

  1. Mix Aster tomato paste, balsamic vinegar, lemon juice, and water for the dressing.
  2. Combine diced apples, celery, rocket leaves, cherry tomatoes, pickled cucumbers, and chickpeas.

Fried Maltese Rabbit

Fried Maltese Rabbit

Ingredients:
250 g rabbit
1/2 leek – chopped
1 onion – chopped
1 celery stalk – chopped
1 teaspoon whole white peppercorns
5 garlic cloves – crushed
200 ml white wine
500 ml chicken stock
2 marrows – chopped
200 g mushrooms – halved
1 tablespoon fresh chives
2 fresh sage leaves
2 tablespoons fresh thyme
Fry Light Low-Calorie cooking spray

Method:
Heat some fry light low calorie cooking spray in a heavy-based casserole over medium heat and add the leek, onion, celery, white peppercorns, garlic and the sage and thyme. Allow cooking on low heat for five minutes or until the onion softens.

Add the rabbit pieces to the casserole and cook slowly for 6-8 minutes, turning regularly, until browned all over. Add the wine, stock and allow to simmer until the volume of the liquid has reduced.

Next, add the marrows, mushrooms and cook for a further 10 minutes.

Serve the rabbit together with your preferred side dish from our books.

Chicken and Pasta Soup

A recipe from Marion Mizzi Recipe Book “A JOURNEY TO A HAPPY YOU” 

Ingredients:

  • 1 onion – diced
  • 2 stalks celery- diced
  • 2 carrots- diced
  • 100g chicken breast- minced
  • 1 can whole tomatoes in juice
  • 4 cup Lombardi chicken stock
  • 1 can long green beans- drained and rinsed
  • 1 glass white wine
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon dried basil 
  • 2 teaspoons whole grain mustard
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 teaspoon salt
  • 1 kg spinach- roughly chopped
  • 50g small pasta shells
  • Freshly cracked black pepper to taste
  • Fry light Low-Calorie Spray

Method:

Spry some Light Low Calorie Spray in a large soup pot, sauté the onions, celery and carrots over medium-high heat until the vegetables start to get tender.

Add minced chicken and cook through.

Add all ingredients (excluding spinach),  starting with the liquids and finishing the seasoning. Add both whole tomatoes and juice to the soup.

Bring the pot to a boil, reduce heat and cover. Allow pasta to cook through, stirring frequently, while breaking the whole tomatoes apart.

When pasta is cooked through, roughly chop the spinach, add to the pot and serve.
