Ingredients

  • 500 grams pumpkin, peeled and chopped into chunks
  • 3 large carrots, peeled and chopped into chunks
  • 1 large onion, left whole with skin intact
  • 1 garlic bulb, left whole with skin intact
  • Fresh rosemary sprigs
  • 500 ml chicken or vegetable stock
  • Seasonings: salt, pepper, coriander (to taste)
  • Fry Light low-calorie cooking spray

 Instructions

 1: Preparing the Vegetables

  • Preheat your oven to 180°C (356°F).
  • Place the pumpkin chunks, carrot chunks, whole onion, and garlic bulb in a roasting dish.
  • Spray the vegetables lightly with Fry Light low-calorie cooking spray.
  • Sprinkle with salt, pepper, and coriander to season, and top with fresh rosemary sprigs for added fragrance.

 2: Roasting the Vegetables

  • Roast the prepared vegetables in the oven for approximately 60 minutes, or until they are soft and slightly golden.
  • This roasting process enhances the natural sweetness of the pumpkin and carrots while giving the garlic and onion a smoky depth.

3: Blending the Soup

  • Once roasted, carefully remove the skin from the garlic and onion (it should peel away easily).
  • Discard the rosemary sprigs.
  • Transfer the roasted vegetables to a blender. Add 500 ml of chicken or vegetable stock and blend until smooth and creamy.
  • If the soup is too thick, you can adjust the consistency by adding more stock as needed.

 4: Final Touches

  • Taste the soup and adjust the seasoning with extra salt or pepper if necessary.
  • Serve the soup hot, optionally garnished with a sprig of fresh rosemary or a drizzle of olive oil.

Ingredients

  • 350g potatoes
  • 3 marrows, grated
  • 1/2 cabbage, finely grated
  • 1 tablespoon flour
  • Salt and pepper to taste

METHOD

  • Preheat the oven to 180C/350F/Gas 4
  • Boil the potatoes in salted water until cooked.
  • Drain, mash, and leave to cook.
  • Place the cabbage in boiling water and cook for a few minutes. Drain and leave to cool.
  • Blend together the cooked potato, grated marrows, and cabbage. Fold in the flour until the mixture comes away from the side of the bowl. Turn the mixture on to a cold surface and shape into cakes.

Moroccan Chicken With Couscous

Moroccan Chicken With Couscous

Ingredients:

100g chicken breast
50g couscous
2 red chillies
1 tablespoon balsamic vinegar
2 garlic cloves- crushed
A handful of fresh coriander
Zest and juice of 2 lemons
1/4 teaspoon cumin powder
1/4 teaspoon coriander powder
2 coloured peppers – deseeded and sliced
500 g rocket leaves
500 g cherry tomatoes – chopped
Fry light low-calorie cooking spray

Method:

Begin by placing the chopped chillies, garlic, coriander stalks and the juice of half a lemon into a food processor. Follow by adding the balsamic vinegar and a few sprays of Fry Light low-calorie cooking
spray. Process until a paste is formed.

Next, pour the paste over the chicken breast and place the chicken on a piece of foil. Close the foil and allow it to marinate for 50 minutes.

In the meantime, cook the couscous according to the instructions given on the packet. Then, add the remaining juice and zest of the lemons, the chopped coriander, rocket leaves, peppers, cherry tomatoes and spices to the couscous to the couscous and mix well.

Heat a griddle pan until hot, then sear the chicken for 7 minutes on each side or until the chicken is cooked well.

Place the couscous on a plate, top with the chicken and serve with a side dish chosen from this book.

Fried Maltese Rabbit

Ingredients:
250 g rabbit
1/2 leek – chopped
1 onion – chopped
1 celery stalk – chopped
1 teaspoon whole white peppercorns
5 garlic cloves – crushed
200 ml white wine
500 ml chicken stock
2 marrows – chopped
200 g mushrooms – halved
1 tablespoon fresh chives
2 fresh sage leaves
2 tablespoons fresh thyme
Fry Light Low-Calorie cooking spray

Method:
Heat some fry light low calorie cooking spray in a heavy-based casserole over medium heat and add the leek, onion, celery, white peppercorns, garlic and the sage and thyme. Allow cooking on low heat for five minutes or until the onion softens.

Add the rabbit pieces to the casserole and cook slowly for 6-8 minutes, turning regularly, until browned all over. Add the wine, stock and allow to simmer until the volume of the liquid has reduced.

Next, add the marrows, mushrooms and cook for a further 10 minutes.

Serve the rabbit together with your preferred side dish from our books.

Spaghetti Ratatouille

Ingredients:
100 g spaghetti
2 garlic cloves-crushed
2 large aubergines – chopped
2 marrows – sliced
500g cherry tomato paste
1 bay leaf
200 ml vegetable stock
Fry light low-calorie cooking spray

Method:
To begin with cook the spaghetti according to the instructions on the packet.

Meanwhile, fry the onions and garlic in Fry Light low-calorie cooking
spray until softened and browned.

Then add the aubergine, marrows and cherry tomatoes, tomato paste,
bay leaf and vegetable stock and simmer on low heat for 15 minutes.

Next, add the cooked spaghetti to the pan stir in the sauce and serve.

Chicken and Pasta Soup

A recipe from Marion Mizzi Recipe Book “A JOURNEY TO A HAPPY YOU” 

Ingredients:

  • 1 onion – diced
  • 2 stalks celery- diced
  • 2 carrots- diced
  • 100g chicken breast- minced
  • 1 can whole tomatoes in juice
  • 4 cup Lombardi chicken stock
  • 1 can long green beans- drained and rinsed
  • 1 glass white wine
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon dried basil 
  • 2 teaspoons whole grain mustard
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 teaspoon salt
  • 1 kg spinach- roughly chopped
  • 50g small pasta shells
  • Freshly cracked black pepper to taste
  • Fry light Low-Calorie Spray

Method:

Spry some Light Low Calorie Spray in a large soup pot, sauté the onions, celery and carrots over medium-high heat until the vegetables start to get tender.

Add minced chicken and cook through.

Add all ingredients (excluding spinach),  starting with the liquids and finishing the seasoning. Add both whole tomatoes and juice to the soup.

Bring the pot to a boil, reduce heat and cover. Allow pasta to cook through, stirring frequently, while breaking the whole tomatoes apart.

When pasta is cooked through, roughly chop the spinach, add to the pot and serve.
