Garlic Soup

Simple, comforting, and full of natural goodness - garlic soup is one of those timeless recipes that nourishes the body from the inside out.

Garlic Soup

Ingredients:

  • 2 medium onions - sliced

  • 1 tsp thyme (or 2 tsp fresh)

  • 1 tsp dried oregano

  • 1 tsp dried basil

  • ½ tsp salt

  • ½ tsp black pepper

  • 1 batch roasted garlic (the equivalent of 8-10 bulbs of roasted garlic)

  • 2 Knorr chicken cubes

  • 100ml Alpro coconut milk or 100g greek Mevgal yoghurt 0% fat

  • 28g chia seeds

  • 2 slices wholemeal bread

  • Fry Light low-calorie (garlic) spray

  • For Garnish (optional): 2 tbsp fresh parsley - minced

  • 10g fresh chives - chopped

  • 1 fresh lemon - cut into wedges

Method:

  1. Heat a non-stick frying pan and fry the onion. Sauté over medium heat, constantly stirring until onions are translucent and golden.

  2. Add the herbs and spices and sauté for an additional 2 minutes.

  3. Add the roasted garlic and stir to combine.

  4. Add water with Knorr chicken cubes.

  5. Simmer for 15 minutes. Reduce the heat to low and add coconut milk or yoghurt.

  6. Using a stainless steel immersion blender, carefully blend the soup until smooth.

  7. Add chia seeds. If desired, garnish with fresh parsley and chives and squeeze a lemon wedge over each bowl.

  8. Serve warm with 2 slices of bread.
