Grilled Veggie Pasta Salad

The perfect fresh and satisfying meal. Packed with fibre-rich vegetables like zucchini, red pepper, asparagus, and red onion, plus capers for a flavour boost—this dish supports digestion, heart health, and balanced energy.

Grilled Veggie Pasta Salad

Ingredients:

  • 1 small zucchini - halved lengthwise

  • 1 red sweet pepper- stemmed, seeded, and quartered

  • ½ small red onion - cut into 1/2 inch thick slices

  • 10 asparagus - trimmed

  • 100 g pasta or 2 packs of Slim Pasta

  • 1 tablespoon balsamic vinegar

  • 1 tablespoon lemon juice

  • 1 tablespoon capers

  • 1 tablespoon oregano

  • Fry Light Low Calorie Spray

Method:

  1. Preheat the oven grill to 200C.

  2. Lightly spray vegetables with Fry Light Low Calorie Spray.

  3. Place the vegetables on the oven rack. Cook all for a couple of minutes, turning once, until vegetables are tender. Remove and cool slightly.

  4. Cut vegetables into 1/2- inch pieces and toss with pasta in a large bowl. Add remaining balsamic vinegar, salt, and black pepper to pasta mixture; toss to

    coat.

  5. Top with fresh oregano.
