Carrot and Pumpkin Soup

Indulge in the comforting flavors of Carrot and Pumpkin Soup, a nutritious and wholesome dish that combines the earthy sweetness of roasted vegetables with the aromatic essence of fresh rosemary and garlic. This creamy, low-calorie carrot and pumpkin soup is not only visually appealing but also packed with essential vitamins and nutrients, making it a perfect choice for a healthy, fulfilling meal.

Ingredients

  • 500 grams pumpkin, peeled and chopped into chunks
  • 3 large carrots, peeled and chopped into chunks
  • 1 large onion, left whole with skin intact
  • 1 garlic bulb, left whole with skin intact
  • Fresh rosemary sprigs
  • 500 ml chicken or vegetable stock
  • Seasonings: salt, pepper, coriander (to taste)
  • Fry Light low-calorie cooking spray

 Instructions

 1: Preparing the Vegetables

  • Preheat your oven to 180°C (356°F).
  • Place the pumpkin chunks, carrot chunks, whole onion, and garlic bulb in a roasting dish.
  • Spray the vegetables lightly with Fry Light low-calorie cooking spray.
  • Sprinkle with salt, pepper, and coriander to season, and top with fresh rosemary sprigs for added fragrance.

 2: Roasting the Vegetables

  • Roast the prepared vegetables in the oven for approximately 60 minutes, or until they are soft and slightly golden.
  • This roasting process enhances the natural sweetness of the pumpkin and carrots while giving the garlic and onion a smoky depth.

3: Blending the Soup

  • Once roasted, carefully remove the skin from the garlic and onion (it should peel away easily).
  • Discard the rosemary sprigs.
  • Transfer the roasted vegetables to a blender. Add 500 ml of chicken or vegetable stock and blend until smooth and creamy.
  • If the soup is too thick, you can adjust the consistency by adding more stock as needed.

 4: Final Touches

  • Taste the soup and adjust the seasoning with extra salt or pepper if necessary.
  • Serve the soup hot, optionally garnished with a sprig of fresh rosemary or a drizzle of olive oil.

Caponata Bake

Ingredients:

GF D

  • 400g medium potatoes or sweet potatoes – thinly sliced 100g light cottage cheese
  • 2 onions – 320g, finely chopped
  • 4 tsp balsamic vinegar
  • 2 tsp vegetable bouillon powder
  • 800g canned chopped tomatoes
  • 2 aubergines – cut into chunks
  • 2 red peppers – deseeded and chopped
  • 30g pack basil leaves picked and finely chopped
  • 3 garlic cloves – finely grated
  • 2 tsp capers
  • 30g flat-leaf parsley – chopped

Method:

  1. Boil the potato slices for 10 mins and drain.
  2. Meanwhile, heat a frying pan and cook the onion until softened.
  3. Spoon in the balsamic vinegar and bouillon powder, stir in the tomatoes, aubergine, peppers, basil, and garlic.
  4. Cover and cook for 20 mins, stirring frequently and adding a little water if necessary — until the aubergine is tender when tested with a knife.
  5. Remove from the heat and stir in the capers and parsley.
  6. Tip into a shallow baking dish. Cover the caponata with the boiled potatoes and sprinkle with the cottage cheese and bake for 20 minutes until the top is golden brown and crispy.

Overeating affects your ability to control your eating habits.

You may consume excessive amounts of food even when you are not hungry.

These characteristics may include:

  • Eating even when not hungry;
  • Constantly returning to “pick” at food throughout the day, even when not hungry;
  • Feeling guilty about eating too much;
  • Generally eating alone due to embarrassment overeating habits;
  • Anxiety about overweight and body image.

Studies have found that foods, particularly high-fat foods, affect the areas of your brain associated with pleasure. These biological triggers can then cause you to associate food with pleasure. Over time, your brain develops a tolerance to the food causing you to increase the amount of food that you consume in order to achieve the same pleasure from eating.

Overeating can lead to unwanted weight gain, and carrying excess weight can increase your cancer risk. But it’s not just about the unwanted calories. Overeating affects your body in a variety of ways.

Artichoke Hearts with Mushrooms and Thyme
 
Ingredients:
  • 500 g artichoke hearts- canned
  • 2 onions- chopped
  • 400 g Mushrooms- chopped
  • 4 garlic cloves
  • 1 bay leaf
  • 1/2 white wine
  • 1/2 vegetable stock
  • 1 slice of lemon
  • 1 teaspoon fresh thyme
  • Salt and pepper
  • Fry Light low-calorie cooking spray
Method:
Try the chopped onions and garlic in a Fry- Light low-calorie cooking spray, until they are golden and softened. Next, add the artichoke hearts, white wine, bay leaf, and vegetable stock.
Cook on low heat, until the artichokes soften.
Follow by adding the chopped mushrooms to the pan and then the thyme and lemon slice.
Allow cooking for another 10 minutes, and serve it warm.

Spiced Aubergine

Spiced Aubergine
 
Ingredients:
  • 2 large aubergines- chopped
  • 200 ml vegetable stock
  • 2 small onions- chopped
  • 1 red pepper- deseeded and sliced
  • 1/4 teaspoon coriander
  • 1/4 teaspoon ground cumin
  • 1 teaspoon chopped ginger
  • 1/2 teaspoon curry
  • 3 garlic cloves- crushed
  • 1 teaspoon chilli
  • Pinch of ground turmeric
  • Pinch of diet sugar
  • 1 diced green chilli
  • 1 tablespoon fresh coriander
  • Fry Light low-calorie cooking spray
 
Method:
Begin by cooking the chopped onions for 5 minutes in some Fry Light low-calorie cooking spray.
Next, add the sliced red pepper, all the herbs and spices, and cook for a further 8 minutes, adding the stock slowly.
Then add the chopped aubergines, diet sugar, chopped green chilli and more vegetable stock. If necessary simmer for 15 minutes and then garnish with some fresh coriander.

Moroccan Chicken With Couscous

Moroccan Chicken With Couscous

Ingredients:

100g chicken breast
50g couscous
2 red chillies
1 tablespoon balsamic vinegar
2 garlic cloves- crushed
A handful of fresh coriander
Zest and juice of 2 lemons
1/4 teaspoon cumin powder
1/4 teaspoon coriander powder
2 coloured peppers – deseeded and sliced
500 g rocket leaves
500 g cherry tomatoes – chopped
Fry light low-calorie cooking spray

Method:

Begin by placing the chopped chillies, garlic, coriander stalks and the juice of half a lemon into a food processor. Follow by adding the balsamic vinegar and a few sprays of Fry Light low-calorie cooking
spray. Process until a paste is formed.

Next, pour the paste over the chicken breast and place the chicken on a piece of foil. Close the foil and allow it to marinate for 50 minutes.

In the meantime, cook the couscous according to the instructions given on the packet. Then, add the remaining juice and zest of the lemons, the chopped coriander, rocket leaves, peppers, cherry tomatoes and spices to the couscous to the couscous and mix well.

Heat a griddle pan until hot, then sear the chicken for 7 minutes on each side or until the chicken is cooked well.

Place the couscous on a plate, top with the chicken and serve with a side dish chosen from this book.

Fried Maltese Rabbit

Ingredients:
250 g rabbit
1/2 leek – chopped
1 onion – chopped
1 celery stalk – chopped
1 teaspoon whole white peppercorns
5 garlic cloves – crushed
200 ml white wine
500 ml chicken stock
2 marrows – chopped
200 g mushrooms – halved
1 tablespoon fresh chives
2 fresh sage leaves
2 tablespoons fresh thyme
Fry Light Low-Calorie cooking spray

Method:
Heat some fry light low calorie cooking spray in a heavy-based casserole over medium heat and add the leek, onion, celery, white peppercorns, garlic and the sage and thyme. Allow cooking on low heat for five minutes or until the onion softens.

Add the rabbit pieces to the casserole and cook slowly for 6-8 minutes, turning regularly, until browned all over. Add the wine, stock and allow to simmer until the volume of the liquid has reduced.

Next, add the marrows, mushrooms and cook for a further 10 minutes.

Serve the rabbit together with your preferred side dish from our books.
