Spaghetti Ratatouille

Delicious & healthy recipe idea from Marion Mizzi recipe book “The Weight Loss Guide”.

Spaghetti Ratatouille

Ingredients:
100 g spaghetti
2 garlic cloves-crushed
2 large aubergines – chopped
2 marrows – sliced
500g cherry tomato paste
1 bay leaf
200 ml vegetable stock
Fry light low-calorie cooking spray

Method:
To begin with cook the spaghetti according to the instructions on the packet.

Meanwhile, fry the onions and garlic in Fry Light low-calorie cooking
spray until softened and browned.

Then add the aubergine, marrows and cherry tomatoes, tomato paste,
bay leaf and vegetable stock and simmer on low heat for 15 minutes.

Next, add the cooked spaghetti to the pan stir in the sauce and serve.

Chicken and Pasta Soup

A recipe from Marion Mizzi Recipe Book “A JOURNEY TO A HAPPY YOU” 

Ingredients:

  • 1 onion – diced
  • 2 stalks celery- diced
  • 2 carrots- diced
  • 100g chicken breast- minced
  • 1 can whole tomatoes in juice
  • 4 cup Lombardi chicken stock
  • 1 can long green beans- drained and rinsed
  • 1 glass white wine
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon dried basil 
  • 2 teaspoons whole grain mustard
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 teaspoon salt
  • 1 kg spinach- roughly chopped
  • 50g small pasta shells
  • Freshly cracked black pepper to taste
  • Fry light Low-Calorie Spray

Method:

Spry some Light Low Calorie Spray in a large soup pot, sauté the onions, celery and carrots over medium-high heat until the vegetables start to get tender.

Add minced chicken and cook through.

Add all ingredients (excluding spinach),  starting with the liquids and finishing the seasoning. Add both whole tomatoes and juice to the soup.

Bring the pot to a boil, reduce heat and cover. Allow pasta to cook through, stirring frequently, while breaking the whole tomatoes apart.

When pasta is cooked through, roughly chop the spinach, add to the pot and serve.

Meet Naomi Borg 25 (years old), upon joining the Marion Mizzi programme she achieved amazing results and has lost over 20 kilos. Below Naomi has opened up and shared her experience with us. 

Tell us about yourself and your relationship with food.

I am 25 years old and have always loved food, this made following strict diets very difficult for me to follow therefore I always struggled to lose those extra kilos which were bothering me. I had been trying to lose weight for a number of years but never managed to lose more than 5 kilos until I started the program at Marion Mizzi Wellbeing.

What made you start the weight loss journey?

(The defining moment when you said you need to make a change)

I started looking at myself in the mirror and didn’t like what I saw, I used to be uncomfortable in clothes and photos and knew I had to do something about it. My old lifestyle habits used to leave me very tired and I knew my body was not happy with what I was giving it.

What made you to choose Marion Mizzi instead of other weight loss programs?

(Had you heard good reviews from friends or relatives?)

The Marion Mizzi program was recommended to me by a colleague which had also lost a considerable amount of weight and changed her life to the better.

How did you find the diet plan?

(Was it easy to follow?)

The diet plan was very easy to follow but most of all it is enjoyable. Now that I have reached my goal I still enjoy eating and cooking recipes from the cookbooks which I found to be of immense help. To me, it’s not a diet anymore! It has become a lifestyle.

What did you enjoy doing most throughout the weight loss journey?

(A particular part of the routine which you’ve enjoyed)

Being 25 and still very much dependant on my parents, I took ownership of cooking and preparing food for myself which is something I enjoyed a lot. I plan my week ahead and prepare food for the day.

Did you like the recipes? What were/are your favourite meals?

The cookbooks are amazing and I cannot recommend them enough! I enjoy cooking and preparing food and trying new recipes. Being a pasta lover, one of my fave dishes is the meaty cannelloni page 172 from the purple book!

Which is your favourite meal replacement flavour?

What was your transformation after the program?

I started weighing 77.7 kilos and now I am down to 57.5 – that is 20kilos and from size 12/14 I am now a comfortable size 8!

What would you advise others who are thinking of starting their weight loss journey?

Never give up!  I have seen and experienced firsthand that nothing worth having comes easy, but it will be worth it. I have had downs in my journey, but I never gave up and I can see the result of that today. Nothing beats feeling comfortable and healthy in my own body!

Salmon Patties

Delicious & healthy main meal idea from Marion Mizzi recipe book “A Journey To A Happy You”.

You will never feel hunger pangs with Marion Mizzi’s diet! 

SALMON PATTIES

Ingredients: 

1 small onion – finely chopped

1 stalk celery – finely diced

2 tablespoons fresh parsley – chopped

1 large John West can salmon – drained

1 large egg – lightly beaten

1 1/2 teaspoons Dijon mustard

1 slice Slimex bread – toasted and crushed into bread crumbs

1/2 teaspoon freshly ground pepper

2 marrows – boiled and mashed

1/2 cauliflower – boiled and mashed

1 lemon – cut into wedges

Fry Light Low-Calorie Spray

Method: 

Preheat oven to 230C.

Coat a baking sheet with Fry Light Low-Calorie Spray.

Heat some Fry Light Low Calorie Spray in a large non-stick skillet over medium-high heat. Add onion and celery and cook, stirring, until softened about 3 minutes. Stir in parsley and remove from heat. 

Place salmon in a medium bowl. Flake apart with a fork. Add egg, mashed vegetables, and mustard, and mix well. Add the onion mixture, breadcrumbs, and pepper and mix well.  Shape the mixture into 8 patties, about 2 1/2 inches wide.

Heat some Fry Light Low-Calorie Spray. in a pan over medium heat. Add 4 patties and cook until the undersides are golden for 2 to 3 minutes. Using a wide spatula, turn them over onto the prepared baking sheet. Repeat with the remaining patties.

Recipe: Ricotta Pie This nutritious and delicious salad is a part of our 7-step diet plan:

Ricotta Pie 

Ingredients:

2 sheets filo pastry

1 medium zucchini – cut crosswise into 1/4-inch-thick slices

1 large yellow squash – cut crosswise into 1/4-inch-thick slices

2 garlic cloves – minced

100g Benna Irkotta

2 teaspoons chopped fresh thyme

1/2 teaspoon grated lemon rind

1 teaspoon fresh lemon juice

1/4 teaspoon black pepper

2 egg whites – lightly beaten

1/4 teaspoon salt

1/4 cup fresh basil leaves

Fry Light Low-Calorie Spray

Method:

Preheat oven to 175°C.

Spray a small oven dish with Fry Light Low calories Spray, fold the 2 filo pastry sheets into two and place at the bottom of the dish.

Meanwhile grate the zucchini and squash and drain well from excess water.

Place all the ingredients in a large bowl and mix well.

Spread the irkotta mixture over the filo pastry sheets.

Bake at 175°C for 40 minutes or until golden brown. 

 

Marinated Beef With Honey

Marinated Beef With Honey

Ingredients:

150g lean beef

1 tablespoon soy sauce

1 tablespoon mustard

1 tablespoon honey

2 handful fresh parsley – chopped

1 handful fresh chives – chopped

200 ml of chicken stock

Fry light low-calorie cooking spray

Method:

Place the lean beef, soy sauce, mustard, and honey into a bowl and leave to marinate for 10 minutes. Heat some Fry Light Low-Calorie Cooking Spray in a frying pan, and fry the lean beef for 2-3 minutes on either side or depending on how you like your meat cooked, over high heat.

Remove the meat from the pan and keep it warm. Add the chopped handfuls of parsley, chives and chicken stock to the pan and mix with the beef juices. Simmer for 2 minutes.

Serve the meat together with all the meat juice.

This dish is to be accompanied by a side dish taken from this book (Veggie Burgers is a recommend dish)

Ham, Cheese & Mushroom Omelette

Ingredients:

  • 2 eggs
  • 3 egg whites
  • 100g ricotta cheese
  • 3 slices Jolly Ham 98% fat-free – chopped
  • 500g mushrooms – chopped
  • Salt & pepper
  • 2 slices Slimex bread – serve
  • Fry Light Low-Calorie Cooking Spray

Method: 

Begin by beating the eggs and egg whites, add the chopped Jolly 98% fat-free ham, chopped mushrooms, crushed garlic, parsley, ricotta cheese, salt and pepper. 

Heat a non-stick frying pan with some Fry Light low-calorie cooking spray and add the omelette mixture. Cook for a couple of minutes on both sides until nicely brown.

Serve with the Slimex bread and your preferred side dish chosen from this book.

Octopus Salad & Mash

Octopus Salad & Mash Ingredients: 

  • 400g octopus – thawed
  • 2 garlic cloves – crushed
  • 2 fresh small red
  • Thai chilies – thinly sliced
  • 2 red peppers – thinly sliced
  • 2 green onions – cut into 2cm lengths
  • 1/4 cup firmly packed Thai basil leaves
  • 2 tablespoons balsamic vinegar
  • 4 large tomatoes – chopped
  • 2 tablespoons capers
  • 2 tablespoons lemon juice
  • Fry Light Low-Calorie Spray

For The Mash: 1/2 a broccoli 1/2 a cauliflower 1/2 garlic clove Salt & pepper

Method:

  1. Prepare two pots, one to boil the octopus until very tender (approximately 30 minutes), and the other to boil the cauliflower and broccoli until tender (approximately 10 minutes).
  2. Meanwhile, cook the garlic and onion in some Fry Light Low-Calorie Spray for 6 minutes, until tender. Add the peppers and continue to cook while adding the lemon juice and balsamic vinegar.
  3. When the octopus is tender, allow to cool and chop into small pieces. Add the pepper mixture and continue to cook on low heat. Add the basil, capers, and tomatoes. Mash the broccoli and cauliflower.
  4. Add the crushed garlic clove and season with salt & pepper. Serve the octopus salad on top of the mash.
