MEAT PATTIES

Super delicious & healthy MEAT PATTIES. 

INGREDIENTS:

200g minced lean meat

2 marrows – grated

1 onion – grated

2 carrots – grated

1 tablespoon soy sauce

3 egg whites

METHOD:

Place all the ingredients into a bowl. 

Mix all the ingredients together and season with herbs and spices.

Split the mixture into a muffin tray. Bake in the oven until cooked well.

Serve with a side dish found in the Marion Mizzi Side Dish section.

It’s officially ice cream season! 

Try our low-calorie, healthy & nutritious ice cream. You will need only a few minutes to make it. 

Ingredients:

100g Asiago Food Frozen strawberries

2 scoops Strawberry Meal Replacement (3 scoops if you weigh more than 80 kilos)

4 glasses of water

1 glass of ALPRO soya milk

Method:

Blend the strawberries and meal replacement together, add water and Alpro soya milk gradually and stir until the mixture is smooth.

Pour the mixture into a container and freeze.

Marrow Pasta

Delicious & healthy main meal idea from Marion Mizzi recipe book “A Journey To A Happy You”.

You will never feel hunger pangs with Marion Mizzi’s diet! 

Ingredients:

5 marrows – diced small

2 onions – finely chopped

150ml Lombardi vegetable stock

100g penne or 2 packs of Slim Pasta Penne

1/2 teaspoon of fennel seeds

2 tablespoons of fresh basil

Fry Light Low-Calorie Spray

Method:

Cook the pasta according to the instructions on the packet.

Meanwhile, cook the onion in a pan for a few minutes using some Fry Light Low-Calorie Spray. When the onion is translucent add the marrows and fennel seeds and cook on low heat for 10 minutes until they start to take a golden color. Add the stock and fresh basil and cook for a further 10 minutes. Transfer the pasta into the marrow sauce and stir well. Leave some of the pasta water.

Season with salt and pepper and add more fresh basil desired.

Smoked Salmon Frittata

Smoked Salmon Frittata

Ingredients:

10 broccoli florets

4 egg whites

Salt and freshly ground black pepper

50g Highland Harvest Smoked Salmon – chopped

1 tablespoon chopped fresh dill. (or 1 teaspoon freeze-dried)

Fry Light Low-Calorie Spray

Method:

Boil the broccoli for 3 minutes or until just tender. Drain in a colander and rinse with cold water until cold. Drain.

Heat some Fry Light Low-Calorie Spray in a medium non-stick frying pan. 

Beat the egg whites with seasoning. Add the broccoli to the pan and saute for 2 minutes.

Pour over the eggs and cook for 3 to 4 minutes or until the base has set.

Scatter the Highland Harvest smoked salmon and dill over the frittata and cook under a hot grill for 2 minutes or until the top has set.

Cut into wedges and serve with salad.

Vegetarian Chili With Avocado

Ingredients:

1 medium red onion – chopped

2 red bell peppers – chopped

1/2 small butternut squash – chopped into 1/2- inch cubes

4 garlic cloves, pressed or minced

1 tablespoon chili powder

1/2 teaspoon chopped chipotle pepper

1 teaspoon ground cumin

1/4 teaspoon ground cinnamon

1 bay leaf

100g canned black beans

1 can tomato pulp

2 cups Lombardi vegetable stock

1/2 avocados – diced

Chopped fresh coriander and/or red pepper flakes

Fry Light Low-Calorie Spray

Method: 

Spray a large pan with Fry Light Low-Calorie Spray and add the onion, bell pepper, and butternut squash and cook, stirring occasionally until the onions are turning translucent.

Turn the heat down to medium-low and add the garlic, chili powder, chopped chipotle peppers, cumin, and cinnamon. Cook, stirring constantly, until fragrant, about 30 seconds. Add the bay leaf, black beans, tomatoes, and their juices and broth. Stir to combine and cover for about 1 hour, stirring occasionally. Taste about halfway through cooking and add more chopped chipotle peppers if you would like.

Serve with diced avocado. 

Marion’s advice: I added a little sprinkle of red pepper flakes (optional). Coriander would be nice as well.

Pearl Barley Risotto With Salmon

Delicious & healthy main meal idea from Marion Mizzi recipe book! 

Tip: Portions may be large. You can divide the portion throughout the day.

Ingredients:

600g baby spinach

100g Findus Salmon Fillet

1 lemon

2 sprigs thyme

Few sprigs of chervil

1 onion – peeled and finely chopped

50g pearl barley

10 mushrooms – cut into quarters

450ml Lombardi fish, chicken or vegetable stock

Salta and black pepper

Fry Light Low-Calorie Spray

Method:

Heat some Fry Light Low-Calorie Spray in a saucepan. Add the onion and saute over low heat for 4 to 6 minutes. Add the pearl barley to the pan, stir well, and pour over approximately 1/3 of the Lombardi stock. Cook over medium-high heat for 20 minutes, stirring frequently and adding more stock to the pan as the liquid is absorbed. Add the mushrooms and the salmon. 

Cook for a few minutes while adding more stock if needed.

Meanwhile, boil the spinach for a few minutes. Drain and puree.

Taste to check that the pearl barley is cooked (it has a naturally chewy texture), then stir the spinach puree.

CHICKEN PIE

Ingredients:

200g Chicken Mince

1/2 Broccoli

1/2 Cauliflower

1 Spring onion

1 Box Cherry Tomatoes

1 Tablespoon Mustard

3 Egg Whites

Fry Light Low-Calorie Spray

Method:

Boil some water and blanch the broccoli and cauliflower for a few minutes until tender. Remove some of the water.

Add all the ingredients to the broccoli, cauliflower and their water and mix well together.

Prepare a medium-sized oven dish and spray with Fry Light Low-Calorie Spray.

Pour the chicken mixture into the dish and bake in the oven for 30 minutes.

Stuffed Peppers

Ingredients:

4 colored peppers – cut in half and de-seeded

200g lean minced meat

2 marrows – grated

1/2 onion – grated

1 garlic clove – crushed

2 egg whites

1/2 teaspoon curry

1/2 teaspoon mixed spice

400 ml Lombardi beef stock

Method:

Place the minced meat, grated marrows, garlic, grated onion, egg whites and spices in a bowl. Mix well with a fork.

Spoon the meat mixture in the peppers.

Pour the stock in the dish.

Bake in the oven for 45 minutes.

Stuffed Artichokes

Easy & Tasty Stuffed Artichokes Recipe from Marion Mizzi recipe book “A Journey To A Happy You”.

Stuffed Artichokes 

Ingredients:

5 artichokes

A handful of fresh parsley

A handful of fresh basil

3 tablespoons capers

7 sun-dried tomatoes (not in oil) – finely chopped

3 garlic cloves – crushed

1 small onion

Juice of the lemon

Fresh ginger

2 tablespoons balsamic vinegar

2 tablespoons Aster tomato paste

Method

Mix all the ingredients together, except for the artichokes.

Stuff the artichoke leaves abundantly with the mixture.

Place the stuffed artichokes in a big pot and add one cup of water, half a cup of white wine and 1 tablespoon balsamic vinegar.

Season well and simmer on low heat until the leaves are tender.

Avocado On Toast

Avocado on Toast. 

Ingredients: 

1 slice Slimex bread – toasted

1/2 small avocado

1 tomato – diced

2 hard-boiled egg whites – diced

1 tablespoon lime juice

1 tablespoon balsamic vinegar

Method:

Put all the ingredients except the Slimex bread into a bowl and mash with a fork to make a paste-like mixture.

Spread over the toasted slice of Slimex bread and serve with a nice salad from the side dish section.
